Where are these figures that show the EU is so reliant on the UK?

I think you're confusing reliance with buying a lot of UK services because they're competitive. If I were an EU member state finance minister at the time of Brexit, I wouldn't be thinking 'God we need those UK services, we'd better not charge high tariffs', I'd be thinking, 'let's capitalise on this and try to attract some of those service providers over here'.
