There is tax avoidance (legally allowed) and tax evasion (illegal)

With respect your viewpoint is that of a teacher/civil servant who picks up his wage every month regardless.
I’m not saying this as a criticism, but if you were self employed and taking risks to earn your living you would be keen to keep tax to a minimum to reflect the uncertainties.
