Thinking about going to Greece on holiday

Thing is - I want to avoid all the clubs and tower block hotels.

Anyone got any good tips for where to go? What island/s? Looking for great beaches, things to see, whilst avoiding the Brits.

Failing that I'd really like Dubrovnik in Croatia - but again the same applies...
