Buy a decibel meter with a data log (cheap as chips) and make sure you use it. This is crucial in any noise complaint
Keep a diary recording what’s happening - if you’ve been woken up, events in the street, conversations you’ve had with the pub.
Maybe CCTV to film punters in the street
