My risotto recipe

Seafood (king prawns, calamari, mussels) and a fish stock.

The killer ingredient though is chorizo, Chop up in to small bits, no bigger than peas and HEY PRESTON... smoky, fishy exquisitification.

Trust me lads. Off the chart.
