I'm very surprised if the spelling only changed once, unless you're continuing a fine and distinguished line of literacy! Not only were a lot of people illiterate, quite a lot of the priests were a bit shaky on the spelling themselves. I'm assuming you mean 16th century, btw - 6th century would be an astonishing feat.
