fish pizza chat: because yeah, finland

going to make hot smoked trout pizzas tomorrow finnish style, and it goes a little something like this;

dry brine the trout for 4 hours tomorrow morning in a brown sugar, salt and chopped fresh dill rub, take it out give him a little wash and pat him dry and then in the pm hot smoke it over some charcoal embers and a little old apple wood and whisky barrel chips smokey thing at about 130 for five tracks of my 2022 chilled af bbq playlist

that's about 20 minutes if you are still using the imperial system. the finnish twist is to put a couple of sugar lumps on the woodchips, it adds to the colour apparently, not done it before. for added finnishness maybe try a sauna.

ding a pizza stone on the bbq and fire her up to just under "dangerous" level and dust it with dry semolina to stoppy da pizza from sticking.

while you are waiting for the thing to heat up, grab some pizza base knock it back, hand shape it out all ya know, like a f**kin pizza shape and let it prove up a bit and top it with some crème fraîche instead of the usual tomato soss. hit that up with the smoked troud cut into strips, thin slices of red onion and tomato, season with salt and pfeffer and some oregano crown it off with some mozzarella and fire it onto the pizza stone. lid down have a tin of redwell steam. checky the pizza after about three sips of steam and then turn it around for an even cook. when she's cooked, scoop her out and finnish (hell yeah) her off with a handful of rocket, some olive oil and a good spritz from a lemon that has been previously dipped in sugar and grilled off until golden and some chilli flakes for a little hint of wtf heat. neck a cheeky shot of aquavit and scoff the bastard down like you give a f**k.
