Offside laws

I confess I no longer know how they operate.

Last week we scored a great goal, and had it ruled out because of a player "interfering with play".

This week it looked to me like Arsenal had a player clearly standing in an offside position at various stages as the move developed, but apparently the goal was good.

I really don't get it.
