i've been googling the bejaysus out of it all v confusing so will just riff it
some say don't add salt some say cover it in salt all i know is to cut the eyes and beak out and scoop the brains and s**t out and wash the bugger a lot and then boil him up in wine and stuff and then marinade and put him on the gorriller and then probably bung it in the bin. only kidding, should be fun.
