Because the Premier League title determines who is the best team in the country

Whereas the Championship title is just 'the best team out of a bunch of teams not good enough to play in a league with the actual best teams'.

If you asked teams in the Championship (or any lower league) their goal at the start of the season it would be 'promotion' i.e. to get to higher league. As long as you achieve that you've succeeded - the title is a nice bonus but not really a major goal in itself.
