Is it not because we become accustomed to the plural spelling...

...on signs, menus etc without subsequently acknowledging that it refers to more than one?

So... we see 'panini' on a menu, which is - as any fule know - Italian for squashed sandwiches (note: sandwiches plural). So we say to ourselves: "Mmmm panini. I'd like a panini. I'll have a panini please," forgtting or not recognising that this is the plural.
We then invariably anglicise it by adding an 's' on for multiple panini because we have forgotten that if you saw it on a menu in English it was say 'squashed sandwiches' and not 'squashed sandwich'.

In short, we forget how signs and menus work.
