few things
- you say builders have accepted liability - is it their insurers who have accepted it? You have it in writing? You shouldnt need to take it to court.

have they sent an adjuster round to inspect damage?
Take photos yourself of damage. Dont throw away damaged items but keep them as proof. Find original receipts if possible.
