My pan advice...
Look for these or something very similar.
1. Chasseur 30cm covered saute pan
I use this every day. It is a great size to cook paella, pasta, curry, use as a frying pan, as a wok etc.
It has a glass lid so you can see what is going on even when covered. It looks a lot like this:

2. Stainless Steel 20cm draining saucepan with glass lid.
The glass lid has stainless steel draining holes to one side. It means that you can eaily drain the pan without needing a stainer or removing the lid. Brilliant for boiling pasta, rice, and veg.

I could easily get by with just those 2 pans and you should be able to get similar.
