You get a point if

at least 3 judges out of 5 rule that within one second a blow with sufficient force has landed with the impact being with the correct part of the glove. Not any old blow.

Why there isn't many KO is two fold.

Firstly, every single competitor in the Olympics is pretty elite. It's not like the pros where a good neo-pro will easily rack up an array of stoppages because the guys he's in against are over-matched.

Secondly, there isn't actually that many KOs in professional boxing. Stoppages a-plenty but not KOs. Stoppages usually take time and are accumulations which you don't get time for in the amateur game.

What you will see in the Olympics is stoppages in the early rounds for the few overmatches from boxers getting a twenty point lead by the end of the third.
