Obviously they are more than physically able, but maybe the tournament organisers think it’s not such an audience draw?

I for one find it less interesting to watch. I know I am not alone in that because every time I go to Wimbledon, they alternate men and women on the show courts; it’s packed for the men’s matches but when a women's match comes on, a lot of people get up and go for a cup of tea or glass of something. So more sets not such a crowd pleaser? Same way that fewer people watch women’s golf, football and cricket?

No idea if that’s the reason though. Could just be tradition + ingrained sexism.
