Hard to know where to start, but:
"If a government here becomes corrupt or unpopular we can vote it out. After today that will no longer be the case."
How is that remotely the case?? What vote that you do now currently have are you going to lose if we stay in?
"If it changes and you don't like after today we will be stuck with it."
That is only true of a Leave vote. We did not need EU permission to hold this referendum. We could have another one and leave at any time in the future. They have no power to stop us. However if we vote to Leave and subsequently don't like it we WOULD need their permission to get back in, so that is the option we are more likely to be stuck with if it goes wrong.
"voting to be ruled from abroad by an unelected cabal of bankers and beurocrats"
The EU is no more ruled by unelected bankers and bureaucrats that ours (Westminster has loads of unelected bureaucrats). But ALL EU laws and regulations have to be passed by the European Parliament and/or the Council of Ministers, both of which arte composed entirely of elected officials.
If people really believed that the EU controls our lives and our parliament is powerless the logical thing to do would be to pay more attention to EU Parliamentary elections than our own. But people don't - turnover in the EU elections is always notoriously low and then used largely as a protest vote against our own government. If the EU has a democratic deficit (and it does) is it not because people do not have a democratic voice, it is because in their ignorance (and this is to a large extent because of media coverage - how much attention is given to EU parliamentary debates in UK media??) they CHOOSE not to exercise it.
Incidentally I don't blame you for your ignorance. The coverage of the EU (as I stated above) in UK media is VERY poor (and in a lot of cases, such as the Murdoch press, deliberately distorted), which is why so many people claim not to understand the issues and are thus very vulnerable to catchy soundbites.
