Problem is, that would enable groundsmen to prepare really f*cked up pitches

Ie, after the 1st test toss, we know the home team will choose for the 2nd test. So the groundsmen can try and produce a pitch that massively favours batting first or second - whichever is easier - in the certain knowledge the home team will benefit. Not good.
