This is my solution

I go to the Carphone Warehouse at a not busy time (I always go to the one opposite Charing Cross because I have found that the staff there are super patient).

I tell them I'm not very good with phones and I need term to explain things carefully

I keep asking questions till I understand. I am not ashamed to ask stupid questions. Keep asking!

Once I have navigated the minefield of "which phone and which network and which tariff" (takes forever), I then ask them to transfer everything from my old phone to this new phone. They usually say something in yoof about "you can just back it up to the cloud and then sync it from there". I explain that this is not possible. Eventually they take pity and do it for me.
