I have a gas hob. My mum has induction. Other than that our range cookers are identical. I cook on hers several times a week and I am never tempted to switch to induction, for these reasons:
- My lovely le creuset pans just don't work as well on the induction hob
- You can't deglaze roast pans on an induction hob
- I find it easier to use a normal knob to turn gas up and down precisely rather than fiddle about on the 'touch screen' number scales on the induction hob
- I can't use my wok. I really like my wok burner on my gas hob and use it a lot.
Things I like about induction:
- I was surprised at how responsive it is. Comparable to gas.
- Safety - spoons and utensils left in pans don't get hot, pan handles don't get hot, the whole thing switches off automatically if you drop something on it, and there's a pause function if you need to deal with a child situation or answer door quickly
- Ease of cleaning. Although tbh I don't find my gas hob difficult to clean. It just gets a wipe down after every cook.
