Yeah, AAC is reckoned to be better quality than MP3 for same bitrate

I've read that 320kbps MP3 is pretty indistinguishable from CD to the average ear (1120kbps I think)

The only reason to use MP3 over AAC is that it's universal - a lot of non-iPods don't support it and if you burn to CD, a lot of CD/DVD players don't recognise AAC.

Transcoding from one bitrate to another or one format to another is a bad idea.
