I actually use the Delia method, and it works perfectly for me.

I do, however, have a very good deep stainless steel frying-pan which is perfect for the job. It means you can easily have three or four eggs poaching concurrently in the same pan, without the whites getting all mungled up together.

This was how I was taught to poach eggs by a proper professional chef, so if you disagree you are officially WRONG.
