Because the pace you run at makes a huge difference

as an example when I was training for the marathon one week i did a training run at 10:30 pace and it was easy, the next week i did the same distance at 9:30 and was completely screwed at the end. I was therefore able to work out what my optimum pace was over a long distance.

Most of them are probably not looking at watches they are probably looking at these garmin things which tell you how far you have run and what pace you are averaging.
