I'd probably look to stop at a couple of places.
The Pembrokeshire coast is lovely. You could head up towards Brecon if you want hills. (or snowdonia if you like bigger hills)
Predictably, I like Cardiff - lots of nice places to eat, drink, watch sport, music, comedy, the museum has a great collection of Rodin sculptures (the kiss) and monet paintings (lots of impressionist art). Lots of parks (greenest city in the UK).
Dunno if you can get to the Gower and rosilly Bay via the train but I'd aim for Cardiff and the gower if you didn't want to spend too much time heading west. West Wales is beautiful, but can be bleakly beautiful if the weather is crap.
