Well, cellar temperature's about 10°C, right, an a fridge gets down to about what 2°, 3°?

An ale with aromatic hops and that, you get it too cold, you're going to impair the flavour. Cold, but not chilled is what you want. A lager gets it's flavour, in the main, from the malts. You can get that as cold as you like, the malt flavours will still be present, but an ale.with hops, wants to be a little bit less.cold. That's the theory.
