I done a GIYLF but got confused- need a techy geek iPhone nerdy pen persons help please...

I have an old iPhone without a SIM card but everything from my new phone still seems to go to it - photos and mails, music etc I assume it is somehow linked through the iCloud
How do I unlink it so I can let unreliable son have the old phone without him getting all of my mails etc please without losing it on my new phone
I did a smell etc
