these loquats were actually quite hard, but I think I may have cocked up by freezing them as they went rather soft.
I definitely should've stoned them though. I didn't think the pits would produce such a strong flavour (although I have tried apricot pit brandy, which was exactly like amaretto).
I think my solution is to add the pithed peel of one orange at a time.
happpily though I also have a gallon of blueberry gin, blueberry and strawberry pisco brandy and another gallon of ginger rum, which is absolutely exceptional
