It needs that tartness, or something to counteract the sweetness, or it's all horrible. The few times I can remember eating membrillo I recall it as being sweet, I was probably several glasses in at that stage though. Tartness Is Good (it's why a good marmalade can be such a brilliant glaze for ham).
