Can't really see membrillo being a great glaze for baked ham as it's so sweet. At least marmalade has some bitterness, but for me you can't beat the classic honey, garlic and soy sauce combo for maximum ham loveliness. I think you need something like soy in there otherwise it's a bit sickly. Honey and Mustard is OK but to balance out the honey you need more mustard than some of my family can handle.
