those guys have been buying and selling for 25 years so they know precisely what to look for and how much they can sell it for.

Other stuff is educated guesswork.

I have an uncle who's a very successful 'picker' in his spare time. Some of the stuff he finds is unreal. A 5k Cartier watch for a fiver, an original oil painting by a known artist for 10 quid at a jumble sale. I could go on.
