Whole chicken boiled for an hour with onions and carrots and leeks and herbs

Bird taken out, stock reduced, 250ml of it whizzed up with three handfuls of chopped walnuts, 2 cloves garlic and three pieces decrusted bread for sauce, served with fluffy rice and another sauce made of 2tbsps olive oil and 1tsp paprika mixed and left to steep a couple of hours, and spinach.
