kebab is like snow in Intuit - has about 3 million variations.

In Turkey you get your kebab on a plate, with a durum or pide (thin bread) next to it and eat it with your hands breaking off bread and picking out the meat with the bread.

Berlin version was making it fast food and chucking it in a ready made durum to go. And chucking all the other s**t on it too (again in Turkey all that stuff is just sitting around the table for you to add to your own taste)

My fave is iskender with yoghurt.
