Definitely go to see the Forth Rail Bridge.
Now I love my Victorian mega-structures anyway - but I found it a breath-takingly beautiful sight. If you get the train to Queensferry, as you walk down to the waterfront, you start getting these little glimpses of the bridge through the trees.
