I was given some Highland Cow to griddle this week...

from one of the animals that was kept off of on of out of our land.

It came in sirloin steak form... a gret old piece that I slapped in the pan and flash fried it both sides so that it was blue.

It was, beyond a shadow, THE juiciest steak I've ever eaten. Just beautiful.
