The players who can influence the games to any degree are paid huge wages. (quarterbacks)

Every play is recorded from every angle so it would be difficult for a referee to influence the scoring to a huge degree.
They have huge teams of officials both on the pitch and in the booth.
Also every team has the option of appealing a bad decision and it being overturned.

An NBA ref has many magnitudes of influence over the result as does an MLB plate umpire who can make the strike zone bigger or smaller.
