Might just be your PC speakers or sound card - music sounds terrible on my PowerBook
but great on my iPod and Apple TV. What version of iTunes? With v9.x there's an import settings button in the bottom right corner when the CD loads into iTunes. Otherwise it's under Preferences/Options; but I forget which tab
I'd recommend encoding at no less than 320kbps for MP3 and 256kbps for AAC (with or without VBR). 192kbps MP3 or 128kbps AAC should be fine for iPod though and will save a bit of space so you can squeeze more onto the iPod
