There are a few different types of bacon made from different cuts of pork.
There are also may ways to cure/cook the bacon with various textures/flavors
Plus........ with bacon, I know exactly what I am eating.
Your lowly sausages could contain eyeball, toenail, arse hairs or all manor of bits that are not wanted after the better cuts are taken from the animal.
