Any cooks in?

Got a couple of sea bass fillets in the freezer, and not sure how to do them.

Mother reckons leave them in the fridge overnight to defrost, then dregde in seasoned flour and fry in butter, but that's Mother's strategy for any fish.

Anyone got anything good for sea bass?
