It's not really relevant, actually playing or not, doesn't make any difference.

You're right, the guitar hero (etc) games, are just a matter of following the instructions, but the thing that makes it interesting is that it is (well, can be made to be) really really really difficult.

The fun part is that it's a social thing, big room full of drunk people messing around. I don't imagine it'd be too much fun on your own.
