Poker's different to horse racing though

You only have so many possible combinations of cards and with a bit of maths & probability you can work out quite closely what your chances of winning a particular hand might be.

A lot more variables in horse racing, football, cricket, etc. - not least because the odds are set by someone else. Bookies have the edge because they have the means to do the research and access to mathematical models for estimating reasonable odds. And most punters are stupid.
