Couriers are very tight on their T&C because they carry high value stuff but get peanuts for it, and their insurers insist on very tight limitation of liability clauses. In my young days I used to do cases about packets of diamonds or Cartier watches being stolen in transit. There's some industry measure of a limit on liability by weight - it's called something like an SDU?? (standard drawing unit??) - you limit your liability to something tiny like $50 per kg. There are various international treaties which govern this area and permit this type of limitation for air carriage - the Warsaw Convention on Carriage of goods by air, I think.

Anyway, this is all freestyle off the tope of my head. If I were you I'd google a few of the big courier sites (eg DHL) and copy their T&C, or find a freight trade association's website, or buy a book on CMR.
