Depends on the resolution of the projector...

...assuming you're projecting it? Generally go for 1000 pixels wide or 750 pixels high for the image (whichever you 'hit' first) at 72dpi and you'll get a decent enough image.

Save your files as .pngs too, they tend to work the best in PowerPoint.
