Really good shops - lots of cool shops in the North and South Lanes (for you and your mrs - everything from shops selling retro football shirts to jewellery, as well as music, clothes, films, all sorts of stuff), and lots of chain stores in and around the Churchill Centre if that's more your bag.
The beach is great in the summer - really good to hang out, some nice bars, pubs, cafes and restaurants down there as well. The pier's OK if you like arcade machines, rides etc - probably worth a look if you're down for a visit.
There's the pavilion to see, plenty of cinemas, and some nice touristy stuff around the Marina - the Volk's railway and some other stuff. Loads of nightclubs around West St and elsewhere, always plenty of live music - something for everyone really.
Not sure about hotels, though - there's so many on the seafront, and I recommend one of those - if you're going to Brighton it's worth coming close to the sea. Come down and have a great time, IMHO it's the greatest city in England.
