What happens is that a customer enters the public house or bar etc and requests from the landlord or his employee for a non alcoholic drink (normally the purchaser would express his preference at this point and select a drink from a wide range and varity of beverages) the lanlord or aforementioned employee thereof would pour and serve the drink and present it to the customer and quite possible make a casual remark about the weather or another reference to popular culture and then tell him or her the price. The customer would then pass over the sum in the form of recognised curency and then get some change if they didnt have the correct money. At this stage a tip would normally be returned to the landlord or his (or her then it would be a landlady) employee but this is entirely discretionary.
