his job to get good food

he needs to be able to find decent suppliers. and the food he does get he needs to treat better. he's using some ingredients when they aren't ripe and that's having a negative effect on the whole dish. certainly his little conconction on tuesday left a bad taste in the mouth. you can't just turn the heat down and expect things to keep going at the same level.
