I am spoilt for cheeses over here, but the one I love and can never find in the shops is

good old farmhouse cheddar.

That aside, I vote for Old Amsterdam (Oud Amsterdam), Roquefort, Gorgonzola, a good creamy mature Brie,

Can't stand Gruyere or Emmenthaler
