an apostrophe indicates a missing letter. This is often the I in 'is' but it can also be the E in the Old English genitive case.
For example, 'the brother of John' used to be 'Johnes brother'. We can abbreviate this to John's brother.
Basically we use an apostrophe + s to indicate the missing word 'is' or to indicate a possession. NEVER use it to indicate a plural (e.g. 'apostrophe's)
