summer salads

what are your favourite summer salads? I made a taboul? at the weekend, which was very nice (with a glass or two of ros?), but tonight i'm going to make a salade nicoise, which is my personal favourite. the secret is to make the vinaigrette with the oil from the can of tuna, and to not overcook the eggs (put them in icy water as soon as the pan boils).
