i just got fed up of being stuck in a rut and eating bland food.
i also felt this could be a positive mind up-tick in an ever depressing world we find ourselves in.
so i initially decided to go meat/fish free for one day a week. that was my goal, on the second day i stretched it to two days, then wtf why not try a week? so now i'm at two weeks and feelling so much better. i can't see myself going back now.
you really do have to invest more effort going veggy to make meals better and more tasty but the pay-off is huge. the simpler the better i find.
so my cacio e pepe two week anniversary tonight. yummsters.
