Classic Recipe (Pan Method)
This method, popular among experts for its superior crispy, golden crust, uses a frying pan and gentle heat to ensure the cheese melts evenly without burning the bread.
Ingredients
2 slices of white sandwich bread (or sourdough for a crunchier texture)
1 tbsp salted butter, softened
A mix of cheeses (e.g., Cheddar for flavour and Mozzarella for stretch)
Salt and freshly ground black pepper to taste
Optional additions: Worcestershire sauce, chutney, or caramelized onions
Instructions
Prepare the bread: Generously slather butter on one side of each slice of bread. Some recipes recommend buttering both sides of all slices for the ultimate crispness.
Assemble the sandwich: Place one slice of bread, buttered-side down, on a cutting board. Pile on the grated or thinly sliced cheeses. Season with salt and pepper.
Cover: Top with the second slice of bread, buttered-side up.
Cook: Heat a nonstick frying pan or griddle over medium-low heat. Place the sandwich in the pan and cook for 3-4 minutes on each side, pressing down gently with a spatula to ensure even browning. Keep an eye on the heat to avoid burning.
Serve: Remove from the pan once golden brown and the cheese is fully melted. Let it rest for a minute on a wire rack before cutting diagonally in half and serving immediately.
Tips for the Perfect Toastie
Cheese Combination: A blend of two cheeses is often recommended: one for flavor (e.g., sharp cheddar, Gruyère, or Gouda) and another for a good "cheese pull" and smooth melt (e.g., mozzarella). Grate your own cheese as pre-shredded varieties contain anti-caking agents that hinder a smooth melt.
Heat Management: Cook over a low to medium heat to allow the cheese to melt fully by the time the bread is golden brown.
Achieve a Crispy "Crown": For extra texture, grate a small amount of cheese directly into the hot pan and place the sandwich on top of it to form a crispy cheese crust on the outside of the bread.
Additions: Enhance the flavor with additions like a few drops of Worcestershire sauce on the inside of the bread, caramelized onions, or even a crispy cheese-and-bacon topping.
