bistopasta con formaggio

we haven't misunderstood their cuisine, no we've advanced it to new heights. we've stripped away nostalgia. we ignored tradition. we took the idea of pasta and asked a simple question: What if it could be, more... more oomphy? put a good old set of british knackers on it. and then we answered it with gravy so thick it could stop a fiat cinquecento on the fast lane of the autostrada. then we popped some cheddar on top. lots.
